The most delicious breads thanks to computer vision

When producing bread, it is important to check whether the quality is up to standard before sending it to customers. Ideally, the quality should already be determined during the production process, so that rejected products are not packaged unnecessarily. At Amstelveld, this process was mostly manual, but thanks to artificial intelligence, it is now done automatically. For Bakkerij Amstelveld, we developed a system with a normal camera, which uses various AI networks to automatically check the bread rolls and reject them if necessary.

A first AI network looks at what type of bread is involved and ensures that each individual bread roll is detected. A second AI network then goes on to check whether the quality is satisfactory. The system then actively rejects bread rolls by controlling various reject belts via a Programmable Logic Controller (PLC).

We never imagined that AI could also complement our work as bakers. We are happy with this cooperation with Pegamento and with the quality the system guarantees 24 hours a day.
